“Happy-hormones” Brownie Recipe

I’ve been thinking about brownies as of late, and in particular the Swedish “kladdkaka”; a fudgy, sticky brownie recipe that has a soft, almost raw, centre. I’m about to bleed any day, and so my body is asking for more deeply nourishing food, and a lot of rest.

I wanted to create a recipe that was made with wholesome ingredients. The sweetness in this recipe comes from dates, with just a little bit of coconut sugar. This brownie is full of healthy fats, natural sugars, fibre, magnesium and iron. It is beautiful served on its own, or with a drizzle of maple syrup and a spoonful of coconut yoghurt or ice cream. As always, the recipe is free from gluten, dairy and animal products. I hope you love it. Happy baking!

Ingredients

2 cups dates, soaked 15 minutes in hot water

2 cups almond flour

1 tbsp ground flax seeds

1/2 cup cacao powder

1/4 cup coconut sugar

1/2 tsp sea salt

1/4 tsp bicarbonate

1 cup water

1/2 cup almond or coconut milk

1 shot espresso (I use decaf)

1 tbsp coconut oil or ghee, melted


Directions

1. Add soaked dates and water to a food processor or blender and blend until smooth.

2. Transfer the date paste to a large bowl. Add the remaining ingredients and stir well.

3. Spread the mixture out into a lined tin.

4. Bake in the oven at 200 degrees Celsius for 30 minutes.

5. Let the brownie cool for at least an hour before serving. Beautifully served with a spoonful of coconut yoghurt and a drizzle of maple syrup.
